Our Story

Imperial Measures Distilling began as the shared dream of two bartenders seeking to make gin rather than just drinking it and selling it for other people.

Emerging from the formative years of Adelaides storied small bar scene, Chris Jones and David Danby were ever present in around and behind bars for some time before their paths crossed working together at one of Adelaides most reputable wine and cocktail venues.

Motivated by the Gin Renaissance they could see unfolding in the bars of Europe and the US, Chris and David decided to explore the concept of making their own gin and so began a deep dive into the heady world of distillation.

After a year of trial, error and many many tastings, they were able to utilise an existing Adelaide Hills distillery to have a crack at their meticulously chosen recipe, and in November of 2015 the first 79 bottles of Ounce Gin Signature were created.

And so began a journey that continues today.

Driven by a passion to share their flavourful creation with the world, the boys trod the path up from Adelaide to Gumeracha for a good couple of years, bottling and labelling in Chris’s Thebarton shed, and beating a path to the doors of every bar and quality retail trader they could find, all the while holding down multiple jobs to support their chosen goal.

As a result of the enthusiastic, committed and unrelenting support of some of Adelaides finest hospo crews, venues and resellers, Imperial Measures Distilling were able to find their own patch of ground in Adelaides inner west – their spiritual home where the first bottles were filled and labelled – with their new 500 Litre Ballarat built still named ‘Clem’  after Davids Great Uncle and 13th Captain of the Australian Cricket Team, taking pride of place in their Thebarton distillery.

Guided by a relentless pursuit of flavour and quality and always giving an approving nod to the formative cocktail bars and recipes of yore, IMD always seek to craft the finest taste creations in all that they do. The Ounce Bar at IMD is testament to that pursuit. Grafted from a nondescript warehouse, the team at IMD have installed a cocktail bar inside the Distillery that has gained a solid reputation for its top class cocktail game and chilled comfortable vibe, as well as their crazy tasty Saturday Smashburgers.

With the addition of their multi award winning Ounce Gin Bold to the stable, as well as their Ruby Bitter Aperitif, SV Sweet Vermouth and their locally harvested uber-tasty mandarin liqueur Mandeaux, the journey continues ever forward for IMD. With the creative mantras of ‘never settling for less’ and ‘only doing the right things for the right reasons’ always at the fore, the creative energies at work at IMD continue to strive for quality of flavour in all that they do.

Well worth a visit for a sneaky little G’n T should you ever be in Adelaides inner west.

David Danby

Co-founder

David has been working in bars since he turned 18, hospitality is in his blood and he has worked across all aspects of the industry. Cocktail bartending was where the true passion for flavour pairing was realised and the journey towards distilling started.

Founding Imperial Measures Distilling in 2014 with Chris Jones was a big gamble but being part of the Australian distilling industry has been a great experience for them both.

Chris has been in and around hospitality for too long to accurately record. Having worked venues right across Australia, his passion for wine and great food is reflected in his enthusiastic willingness to talk about all things IMD related as well as in his waistline.

The partnership with David was built around their shared love for great flavour experiences and it is in this shared pursuit that Chris has found his happy place.

Brent Giles

Bar Manager

The Bar & Cellar Door Manager, Brent Giles, has long been a friend to Imperial Measure’s Distilling. His career began with him developing his craft in hospitality and cocktail at award winning venue’s from his humble beginnings at LIBERTÉ (Gourmet Traveller Bar of the Year) and his stint as Head Bartender at Hains & Co (Small Bar of the Year three years running). Now he practices these skills with honed precision and easy hospitality, and spends a good amount of time ensuring his guests are well imbibed with artisanal cocktails.

Dan Wall

Street Jesus

Dan Wall has enjoyed an illustrious career in hospitality with a stellar record in cocktail competitions over the years. Working across many of Adelaide’s finest venues, he has quite a reputation for being well versed in the art of the party. Dan has recently joined the team at IMD as our own ‘Street Jesus’ and is spending his time doing what he does best, talking smack and slinging IMD booze around to all the best venues in SA. Look out for this likely lad, he’ll be happy to splash some of our wares for you.

Jacob Barter

Mover, Shaker and Stirrer

Sales representative and all around mover shaker and stirrer, Jacob has an eclectic background not just in hospitality but also being a qualified tradesman and having multiple years of living overseas. His eccentric and curious mind is one we are glad to have on the team as head of southern sales.
