Negroni

The Negroni is an all time favourite of the IMD team, in fact, we consider it right up the top of the list of human achievements. Three ingredients, equal measures, delicious and easy.

– 30ml Ounce Gin ‘Signature’
– 30ml Ruby Bitter
– 30ml Scarlet Sweet Vermouth
– Stir down with ice
– Strain into a tumbler over fresh ice
– Garnish with an orange twist

Southside

Some people say it's a Gimlet with mint and some say it's a Mint Julep. Either-way it's a delicious citrus, mint and gin based cocktail.

- 60ml Ounce Gin 'Signature'

- 30ml Lime Juice

- 20ml Sugar Syrup

- Handful of mint

- Combine ingredients into a cocktail shaker

- Add ice & shake for 7 - 12 seconds

- Double strain into a coupe

Pegu Club

The Pegu Club’s origins date back to the early 20th Century, and to the club of the same name located just outside of Rangoon in what is now called Myanmar. Like many British social clubs in southeast Asia, the Pegu Club was a product of imperialism, a place for British officials to enjoy some libations in their newly colonised territory.

- 60ml Ounce Gin 'Signature'

- 30ml Mandeaux Liqueur

- 20ml Lime Juice

- 10ml Sugar Syrup

- 3 Dashes Orange Bitters

- Combine ingredients into a cocktail shaker

- Add ice & shake for 7 - 12 seconds

- Double strain into a coupe

Army & Navy

– 20ml Orgeat Syrup (maybe a touch more for more sweetness)

Martini

The Martini is a contentious drink, it can be made myriad different ways and each person should find the way they like it best. 

That being said, a classic dry Martini is:

– 60ml Ounce Gin ‘Bold’

– 15ml Umami Dry Vermouth

– Stir down with ice

– Strain into a chilled Martini glass

– Garnish with a Green Olive

Red Snapper

Most people believe it's a Bloody Mary with gin but we think they're wrong. The Red Snapper showcases Ounce Gin 'Bold' that provides a delicious drink that will cure your hangover or the perfect brunch cocktail.

- Grab a tall glass of your choosing.

- Pour celery salt & pepper onto a small plate. Rub the juicy side of a lemon wedge along the lip of your glass and rim the glass with the celery salt & pepper mixture, fill the glass with ice and pour:

- 60ml Ounce Gin 'Bold'

- 20ml Lemon Juice

- 6 Dashes Tabasco Sauce

- 4 Dashes Worcestershire Sauce

- Top with Tomato Juice

- Stir to mix all the ingredients together

- Garnish with a celery stalk

Tom Collins

The Tom Collins is another classic gin cocktail that is incredibly refreshing.

Grab yourself a tall glass filled with ice and add the following:

– 30ml Lemon Juice

– 20ml Sugar Syrup

– Top with soda

– Garnish with thyme and a lemon wheel

Corpse Reviver #2

The Corpse Reviver is one of those 'pick-me-up' cocktails that were prescribed by bar keeps of old to revive those souls that appeared in their bar feeling worse the wear from over indulgence in the same place the night before.

- 20ml Ounce Gin 'Signature'

- 20ml Mandeaux Liqueur

- 20ml Lillet Blanc

- 20ml Lemon Juice

- 1 Dash Absinthe

- Combine ingredients into a cocktail shaker

Boulevardier

The Boulevardier is simply a variation on the classic Negroni that is adored for its deft balance of bitter, boozy and sweet. Three ingredients, equal measures, rich, delicious and easy.

– 30ml Scarlet Sweet Vermouth
– Stir down with ice
– Strain into a tumbler over fresh ice
– Garnish with an orange twist

Sommeliers Breakfast

The Sommelier’s Breakfast is a wonderful digestif, half Ruby Bitter and half Espresso Coffee. The perfect after dinner treat, or as the name seems to suggest the perfect hair of the dog.

The Margarita is one of the most popular cocktails in the world that combines the flavour of tang of lime with the Imperial Measures Distilling Mandarin Liqueur.
